Les Maraîchers' buckwheat farin brujun (in semolina)

Ingredients

  • 250 g buckwheat flour

  • 8 g salt

  • 2 g pepper

  • 2 eggs

  • 40 cl milk

  • 10cl liquid cream

  • 60 g melted butter (+ 10 g butter for the mould) 

Preparation

  1. Vigorously whisk the buckwheat flour with the salt and pepper.
  2. Gradually add the eggs, milk, cream and melted butter.
  3. Pour into a buttered dish.
  4. Bake for about 45 minutes at 180 degrees.
  5. Leave to cool.
  6. Blend in a food processor.
